1 cup of daikon radish has 25 calories, 5 grams of carbohydrates, half of those are fiber!

Thickly slice the radish by hand or with a mandoline (about french fry width). Heat up a pan, spray with pam or a turn of canola oil. Add some sliced aromatics (I used garlic and shallots), allow them to become fragrant and then add the daikon. Toss it for a minute or so, then add some water to the pan, cover and allow to simmer for a few minutes. At the end add sauce of your choice, I used some leftover sweet soy sauce that was made at New Years and a squeeze of lime.
